"Coenobium is the basic wine of the Monastery with an approximate annual production of 12000 bottles, about 80% of which is shipped through us to satisfy the US market. Its intrigue comes from the volcanic soils that underlay the vineyards and the longer than usual contact that the fermenting juice has with the skins ... this being a vinification technique encouraged by Bea." -Importer

Through passion sustained and encouraged by my sons, Giuseppe and Giampiero, and also by the irreplaceable presence of Marina, my wife and mother of my children, our family has come to appreciate each other in more profound ways, each day relishing the fruits of our labor at our table. With each passing year, I better understand our land, respecting and caring for it... and at the end of each year extract from it a wine which is totally unique, continually developing, improving, and sustaining our health. With an ever growing conviction, we practice, discover, and appreciate natural winemaking methods that exclude the use of chemicals in the vineyard and artificial stabilizing techniques in the winery. Earthy and lightly spicy on the nose with hints of brown sugar, bay leaf, eucalyptus, cotton bandage and a big chicken base note that builds in the glass. Sweet peach and pear fruits on the palate with light spice tones and a top note of herbs linger on the long finish. 89pts

This smelled very sweet and savory with starchy notes and the sweet melted collagen tone of boiled pigs feet with some spicy woodsy backing tones that reminded me a little of Lopex de Heredia's white wines. The acids were a little fizzy and the wine was a touch bitter but still maintained a lean focus core of white cherry toned fruit. 87pts

Enjoying this wine for a second time... Great provenance, good acid balance, a touch of tannin from the hand pressed stems and earthy notes lent itself well to our dish of Italian pasta, olive oil, spinach, mushrooms, pine nuts and Parmesan!

Nuns probably aren't the first people who come to mind when you think of winemaking, but this white was indeed made by a group of nuns in Italy's Lazio region. They did a phenomenal job, too: this unique, dry white wine is full of pears, quince, cinnamon, and mineral flavors. Put just a light chill on it and enjoy.
