Big dried fruit and roasted herb aromas greet the nose followed by truffly and mushroomy accents to the over-ripe fruit all layered over spicy oak. Surprisingly light one entry, this is rich with black and red fruits that show a less pronounced sense of over-ripeness than is found on the nose, though a bit of aromatic pruniness marks the palate. The wine is surprisingly medium bodied with ripe, slightly chewy tannins supporting gently medicinal cherry fruit and a nice caramel and vanilla edge on the backend leading to a moderately long, dark macerated cherry fruit, tamarind tinged, and wood spiced finish. Not my style of wine but one that is well done for its type and will have broad appeal for it. 88pts

Goes well with fondues. Vanilla, leather notes on nose, pleasing fruits with mineral notes on palate. Nice balanced, slightly tart finish. Overall, was very pleasing to diverse group of guests.

Appearance: Dark purple-ruby core with lighter rim and moderately stained, pronounced tears forming on the glass. Aroma: Aromatic with ripe black and red cherry, blackcurrant and berry fruit, baking spice and sweet tobacco with red and black licorice, oak, cocoa and subtle camphor notes Palate: Dry, nearly full-bodied, with ripe black cherry, cassis and red fruit, baking spice and oak accents on entry with sustained ripe primary and mostly black fruit, dried autumn leaf, cocoa and a pleasant suggestion of camphor on the mid-palate into the finish. The finish is fresh and moderately long, showing lingering cherry and berry notes with oak and barrel spice nicely supported by fine, balanced tannins. The 2017 JUSTIN Cabernet Sauvignon is an extremely versatile food pairing wine that makes it a great go-to red for many pairings ranging from a picnic of artisanal cheese and charcuterie, a Philly cheese steak sandwich, to a classic Entrecôte (steak) Bordelaise with pommes frites. It’s a perfect wine to bring to a dinner or party for wine lovers. pH: 3.77 Total Acidity: 0.55g/100mL Alcohol: 14.5% by volume

Tasting Notes: Appearance: Deep purple ruby core, slightly lighter at the rim showing slight staining on the glass. Aroma: Aromatic with black cherry and blackcurrant fruit, attractive oak and complex cigar box notes with cocoa and a subtle purple floral note. Palate: Dry, moderate plus bodied, with ripe blackcurrant, black cherry and a touch of red fruit brightness on the entry. Balanced oak, vanilla spice and brioche notes mixed with classic savory cabernet varietal cues mingle on the mid-palate. The finish is moderately long and fresh with sustained rounded fruit and lingering baking spice balanced nicely by firm, smooth tannins. Food Pairings: This is a perfect go-to red that’s great with variety of pairings from pasta Bolognese to Wagyu burgers, or try it with a variety of freshly baked wood-fired pizzas. Its versatility is amazing. Vintage Notes: The 2016 vintage started with a warm winter, with near normal precipitation levels. The rain was helpful to replenish the underlying soils a bit for the coming vintage, but not enough to break a five-year drought. The spring was warm, causing an early bud break followed by a cooling period that prolonged the flowering season without negatively affecting pollination, spreading out the season a bit. June and July were warm with veraison only slightly earlier than normal, but lasting a bit longer due to the variable flowering times seen in the spring. August stayed warm through early September when things cooled a bit, allowing the remaining fruit to continue to develop beautifully through September and October balancing ripeness and maturity in our cabernet sauvignon parcels and giving the balanced character that has defined our JUSTIN Cabernet Sauvignon in each vintage. pH: 3.77 Total Acidity: 0.6g/100mL Alcohol: 14.0% by volume

The mid-palate is fresh with sustained ripe fruit, toasty oak notes and softly textured tannins. The finish is moderately long with notes of cherry candy and blackcurrant fruit matched with subtle classic Cabernet savory elements. Pairings: The 2015 JUSTIN Cabernet Sauvignon is a great all-around choice for a wide range of food pairings from a simple cheese and charcuterie plate or a burger to vegetable lasagna, or even a prime rib.
