Fruit for these wines comes partly from our Estate managed vineyards at Red Hill plus fruit purchased from a number of carefully selected vineyards from other sub-regions of the Mornington Peninsula. “The quality of these wines are often equal to many other vineyards best” (James Halliday) The fruit for these wines is from our mature low yielding Estate grown vineyards. A combination of vine age and careful vineyard management produces our best quality fruit. Between 30% and 50% new French Oak combined with the powerful fruit flavours produce the unique Paringa "style" upon which our reputation has been built. Read less

Attractively perfumed on the nose with floral aromas of violet and white flowers leading to measured tones of cocoa and vanilla, some dried herbal notes, hints of roast beef and black berry fruit. Rich, a touch chewy, but fresh in the mouth with a gentle softness that makes this both bold and yet supple in the mouth. the flavors are a touch muddy, still rich with dark cherry and plummy fruit but muddled with macerated herbal notes and beefy extract. the finish really pops with savory, earthy fruit that shows impressive persistence. A bit dense for my palate but there is no denying the quality here. Lots of savory, almost black olivy notes and hints of sun dried tomatoes emerge to frame the fruit on the palate. 88pts

The Paringa Shiraz has a dark red hue, with an intensity that is retained from the core to the rim of the glass. It has an aroma of intense blackberry and black currants that are contrasted with cinnamon and nutmeg spices, balanced by a hint of mocha oak influence. The palate conveys the dark berry fruits of the nose with a slight note of secondary development adding complexity. The acidity is complimented by a delicate sweetness and soft, fine tannins that add structure to the palate. Lovely oak integration promotes a hint of cedar and spice that lingers on the elegant, velvety finish. - Winery RESIDUAL SUGAR: 2.51 g/l TOTAL ACIDITY: 6.29 g/l pH: 3.4 g/l
