Breathing time for 2005 and 2000 Bordeaux wines?


I am having a Grand Vin Bordeaux tasting with these 2005 wines:
Pontet Canet, Lynch Bages, Pichon Baron, Pichon Lalande, Cos d'Esttournel, Rauzan-Segla, Leoville Barton, Cannon la Gaffeliere and last a 2000 Leoville-las-cases.  How much time should I allow the wines to be opened in advance prior to tasting?  I will be bringing them up from my 55 degree cellar so they will have a slight chill versus 70 degree room temperature for drinking by the time we will start.  I plan to blind taste these wines over the course of four hours along with bread and cheeses with a small group of friends.  Any thoughts?

  • 540854JTWinegeek I would decant all the 2005's about 1 hour prior to serving, and decant the '00 Las Cases just before serving to allow the nuances of the more mature wine to open in your glass. Like the previous post - do not over think this!

  • 164984abulloch (1) ignore the advice not to 'overthink' - that amounts to saying 'iit doesn' t much matter', but it will in fact make a difference how you prepare these wines; (2) bring them up from your cellar two days or so ahead and let them stand upright at room temperature, to settle and to come gradually to room temperature; (3) decant them two hours or so ahead - then observe how they change and come out over the course of your four hours of tasting ( make sure your guests don't finish any of them up early: spread them out); (4) no! no cheese! you'll clog your palates in ten minutes and won't taste the wine. Serve plain crackers and slices of apples. rember the wine trade dictum: 'sell on cheese, buy on apples'. These are all big complex wines that are still very young - give them a chance!


  • I would not overthink this. Bring the wines up 1-2 hours before drinking. I really does not matter when you open them unless you are going to decant. Most of these wines are fairly young so some air exposure by decanting might help a bit or just swirl them ronnd and get some air in. Good luck!
