Blanquette de Limoux is a sparkling (petillant) wine produced in the Languedoc-Rousillon region of France. It is said to be the oldest form of sparkling wine in the country, predating Champagne, first produced in the 1530s by Benedictine monks at the Abbey Saint-Hilaire. Limoux is located in the Aude départment in the foothills of the Pyrenees, near the Medieval town of Carcassone. This is the highest and coolest area of the Languedoc. The “blanquette” in the title simply indicates its white color. 

The grapes used in Blanquette are Mauzac, Chenin Blanc and Chardonnay. Historically, the wine was predominantly Mauzac, but it is now more common for a larger proportion of the other, more prestigious grapes to be used. Each grape is vinified separately, then blended before bottling. The secondary fermentation takes place in bottle as it does with Champagne.
