The Highlands is the largest region in Scotland. It covers the entire northwest part of the country, touching on Speyside to its east. Because of the sheer size of the Highlands, there is a big range in styles produced. The whiskies tend to be very rich and full-bodied, but vary in smoky characteristics. All Scotch is produced from malted barley, and sometimes this is roasted over peat smoke prior to fermentation, which gives it that smoky edge. Sometimes the source of the water used in production comes from naturally peaty soils, and this too can impart slightly smoky flavors. Ultimately, to peat or not to peat is up to the discretion of the producer. The smoky characteristics of Highland Scotch tend not to be as pungent and forward as those from Islay, however, more like sweet tobacco or barbecue smoke.
