I'm waiting for someone to do a study to see how much money Chinese wine consumers are really willing to spend. There have been many articles similar to this one with stories about exorbitant prices paid by individuals, but will prices really skyrocket?

Its still very niche. Hong Kong, Shanghai, Macau etc. The average Chinese person still drinks the strong regional fermented rice wines. It'll be interested to see how the population as a whole develops, but I dont think a few billionaires will set the tone.
