Lambruscohhhh Yeah!

I wanted to share a great food and wine pairing suggestion I got from our resident wine guru Gregory Dal Piaz yesterday. The food was a favorite snack of mine - a triscuit with a drop of truffle oil topped with a thin slice of salami and mozzarella cheese. He suggested either a sparkling shiraz or a Lambrusco, both of which I've never tried but heard good things about.

I picked up the Lambrusco ( at Wine Therapy (, where the guy behind the counter said he hoped I would be having it with food, and when I told him about the pairing he got visibly giddy. That was a good sign...

The slightly chilled lambrusco offered an amazing contrast to the rich textured salty flavors of the truscuit by adding sweetness and lots of acid which cut through the fat of the salami. And the bubbles were a great contrast to the round cheese flavor. All in all a fantastic pairing!

Anyone enjoy any similar pairings?

To a wine snob, Lambrusco is red fizzy junk, but to the rest of us, it makes such a good pairing with Salami and other fatty Italian meats. It's also great with pasta with meat sauce (bolognese), pepperoni pizza, sausage, etc - see a theme?
