Today, to comply with european community standards, hygiene and traceability are become compulsory and essential for consumer, always looking for dietary security. European legislation on 14 june 1993, our winery is in keeping with HACCP standards. At every bottling process, we take samples for micro-biological analysis. We keep them for two years, then we taste all the bottles from a same vintage. We estimate the evolution of the quality for every vintage.
