Gavalas Winery Santorini 2014

Winemaker's Notes:

Santorini wine is produced from the exquisite white native variety of Assyrtiko carefully selected from the traditional vineyard of the island. This vineyard is considered to be the oldest in Greece, it has never been affected bythe Phylloxera disease, and the grapes are grown on original stock. The rainfall on the island is limited and the winds can be very powerful. In order to protect the grapes from the strong winds, the vines are pruned in a cylindrical form - a characteristic way of pruning in Santorini - so that the fruit can mature in the centre. The harvest begins in the middle of August. The grapes are brought to the winery,having been carefully placed in crates and baskets, never completely filled so as to avoid any damage that might occur in transportation. Only 25% of the grape juice is extracted. It is then placed in stainless steel tanks where with a cold process it is separated from the lees. Fermentation then takes place in stainless steel vats at 18oC. The result is the most distinctive, dry white wine, characterized by a bright yellow – whitecolour. On the nose delicate aromas of fruit - pear, lemon and pineapple - are present. On the palate, the wine is smooth, rich, fruity and full-bodied. It has a balanced acidity and along aftertaste. It is best served chilled at 8-10oC. An ideal accompaniment to seafood, white meat and light cheese.

Gavalas:
Our winery is located in Megalochori, and you will get there by walking through a small lit up stone tunnel. The winery is a small museum that tells the three century tradition of the Gavalas family in the winemaking industry. Tours take place from April 15th until the end of October from 10:00 to 20:00. Call us to arrange a visit.

Boldly pronounced aromas of dried apricot, lemon and mango with a good dose of heat rolling off the nose as well. Crisp and tart flavors of lemon on entry, coming through the mid palate with explosive acidity highlighting the strong citrus notes. There's also a touch of a wooded note towards the long finish with a whisper of melon rind.

Tight on the nose with a fine blend of mineral and subtle sage like aromas. Juicy on entry, this hits the palate with admirably purity and liveliness showing off very clear and tense flavors of dusty dry earth, yellow fruits, and a faint hint of yellow tomato that picks up where the sage on the nose leaves off. I really the clarity this shows on the palate and tension in the mouth. Definitely towards the lighter bodied end of the spectrum, this is another wine with salty minerality that extends the finish, but accompanied by such a wonderfully refreshing purity of fruit. I can drink a bottle of this on the patio even if I didn’t have any octopus. 91pts
