La Colombaia Valpolicella Ripasso 2007

Winemaker's Notes:

Valpolicella Ripasso is prodcued in a two-step process. In late September, Corvina, Rondinella, and Molinara grapes are harvested and vinified to produce Valpolicella, the classic wine of the region. A few weeks later, more mature grapes are harvested and air dried until the spring. Those grapes are vinified to make Amarone. Following the Amarone production, the Valpolicella is refermented on the Amarone lees. This is the ripasso process and it yields a wine that is more complex and distinctive. This is an excellent wine with Amarone characteristics that can be enjoyed within five years of the vintage.

Tasting Notes:

Valpolicella Ripasso has a deep and intense ruby red color. On the nose, it displays very particular and enjoyable candied fruit with elegant scents of spices and cinnamon. The taste is warm, smooth and velvety, enveloping pleasant flavors of ripe cherry on the palate.
