Neil Ellis Red Bordeaux Blend Stellenbosch Cabernet-Merlot 2007

Winemaker's Notes:

Variety: 55 percent Cabernet Sauvignon; 45 percent Merlot Soil type: Predominantly Decomposed Granite Vinification: Fermentation initiated in stainless steel tanks and underwent a series of pumpovers until dry. Further maceration allowed before drawing off and light pressing. Maturation: This wine spent 16 months in French oak barrels of which 25% was new. Balance 2nd and 3rd fill barrels. Analysis: Alcohol 14.0 percent; Residual Sugar 2.0 g/litre; Total Acid 6.0 g/litre; pH 3.6 Tasting note: Medium red, purple in colour. Bright plum, cassis and fine minty touches. Youthful palate with plummy like fruit, balanced by firm but accesible tannins.

Neil Ellis Wines differs from most South African wineries in that instead of owning vineyards we have focused on producing the best wine possible and sourcing the grapes from top quality growers. Recognizing that different grape varieties thrive under different soil and climate conditions which are not likely to be found on a single estate, from our company's start our philosophy has been to locate those areas that produce a distinctive grape quality and work closely with quality-minded growers in those areas. Today our grapes come from three main vineyard sites: Oude Nektar Farm in Jonkershoek, Stellenbosch; Contreberg Farm in Groenekloof, Darling; the Whitehall farm in Elgin. Read less

Sein Bukett betört mit intensiven, fruchtigen Aromen von schwarzer Johannisbeere und dunklen Beeren, wozu sich im Hintergrund Zedern gesellen.
