Pouilly Fume Silex Didier Dagueneau 2004

Winemaker's Notes:

Cuts like a knife, with live-wire Key lime, grapefruit, chalk and sea salt notes. Rich and powerful, but very nervy through the long, mouthwatering, collar-grabbing finish. Almost severe now in its minerality, but just wait.

Recently enjoyed this bottle with another somm in Portland at Carafe. Initially, it was very closed, so we had the server decant it. By the end of the bottle, the intensity and complexity was astounding. Lemon rind, steel, flint, anise and wet minerals galore- all packaged in a focused, linear, concentrated structure. I wish we had been able to let the wine breath for another hour. Needs to lie down.

Silex, barrel-fermented & aged, is made from 35 to 65 year-old vines which Dagueneau believes make the most structured Pouillys. It confirms Dagueneau's view that Sauvignon is one of the most complex, subtle grapes and that its wine are as noble as white Burgundies.
