Zenato Valpolicella Superiore Ripassa 2012

Winemaker's Notes:

Deep ruby-red in color, this wine shows intense aromas of blackberries and black currants underscored by aromas of spice pepper, and a hint of leather. On the palate, it is smooth and viscous with well-balanced acidity and alcohol. Food Pairing: Pair this wine with risotto, Lyonnaise sauces, beef negimaki, and rabbit ragu.

Ripassa is the name that Zenato has given to this wine, which is closely related to Amarone. Immediately after fermentation of the partially dried Amarone grapes, the finest selection of Valpolicella is “repassed”, starting off a second alcoholic fermentation. The alcohol content rises and the wine acquires a richer colour with greater extracts and fragrances. After ageing in the bottle for 6 months, this wine becomes extremely long, plush and velvety, with intense fragrances of red fruits. The Ripassa is one of the most significant wines in the history of our company. - Winery
