Domaine Saint Hilaire
The Domaine is tucked away a mile back from the main road that connects Molière's Pezenas and the water's edge at Mèze. Whether it's the oysters of Bouzigues, the long white beaches of Marseillan, Bézier's bull-fighting ring, Sète's seafood restaurants and panoramic views of the Mediterranean, or Montpellier's marbled Place de la Comedie for people-watching and shopping, there are plenty of leisure pursuits to be enjoyed within an hour of the Domaine.
The buildings themselves comprise a Bastide, built in 1780, and an Art Deco wing added in 1934. To the North, the wooded park and a large vegetable garden provide the perfect cover for a shady afternoon walk, while there's always something wine-related going on in the winery buildings which surround the courtyard to the South. Here, depending on the season, you can watch the whole process as grapes from the surrounding vines are gathered, fermented, barrelled, bottled and, of course, sold, on site. A Blanquette de Limoux, which I bought thinking was Chardonnay but actually is mostly made from a local varietal called Mauzac. I am looking for a Saint-Hilaire red that I found at Target! It was called "Luscious Red" and had a whimsical label w/a pair of lips on it?
